Recipe Ingredients for Roasted Chicken wtih Balsamic Vinaigrette

1/2 cup balsamic vinegar
1/4 cup lemon juice
1/4 cup dijon mustard
3 garlic cloves, minced
1 tsp salt
1 tsp ground pepper
3 tbsp olive oil
16 ounces chicken
1 tbsp parsley, chopped
1 tsp lemon zest

Recipe Directions for Roasted Chicken wtih Balsamic Vinaigrette

  1. Whisk vinegar, lemon juice, mustard, garlic, salt and pepper in 13x9 baking dish; whisk in 1/2-1/4 cup oil.

  2. Coat whole chicken, cut into 6 pieces.

  3. refrigerate at least 2 hours

  4. Bake at 400 for 45 miutes.

  5. Remove chicken to plate.

  6. Using separating cup, or spoon, remove excess oil.

  7. Pour remaining liquid into small suace pan and boil for 8 minutes, until thick.

  8. Pour sauce over chicken.

  9. Top with parsley and zest from 1 lemon.
