200 g red pepper
200 g zucchini
50 g onion
1 tbsp Olive Oil
1 tbsp Balsamic Vinegar
1 tsp honey
1 tsp garlic

Recipe Directions for Roasted Chicken and Vegetables

  1. Chop Vegetables

  2. Marinade chicken and vegetables in mixture of olive oil, vinegar, honey and garlic.

  3. Bake Chicken on rack & vegetables in shallow dish for 25 min. at 425 degrees F.
