A basic chicken and veggie dish for 1 or 2 people

Recipe Ingredients for Roasted Chicken and root veggies

1 small potato
1 small turnip
1 chicken drumsticks
1 beet
2 tsp garlic
2 tsp olive oil

Recipe Directions for Roasted Chicken and root veggies

  1. Preheat oven to 425

  2. wash the potato, turnip, and beet. Peel the turnip. Dice the potato and turnip into large pieces but leave the beet whole.

  3. Toss the potato, turnip, and chicken with the olive oil. Place in a roasting pan. Place the washed beets on tinfoil and drizzle with oil. Make a packet out of the tinfoil.

  4. Cook chicken and veggies in hot oven for 5 minutes, then turn the oven down to 375.

  5. Check the beet for tenderness after 25 minutes. If it's ready take the beets out and let cool until cool enough to handle. Peel, dice, and put back in the oven with the rest of the veggies. Bake until potatoes and turnips are tender and chicken is cooked through, a total time of about 45 minutes.
