Whole roasted chicken! I usually throw it in a pan surrounded by vegetables and potatoes, and dribble over with olive oil, lemon juice, and white wine vinegar. then I salt and pepper the whole thing.

Recipe Ingredients for Roasted Chicken

4 lb whole chicken
1 onions
3 tbsp lemon juice
1/4 cup extra virgin olive oil
1 tbsp dried rosemary
1 tbsp dried marjoram
1/2 cup fresh basil
1/2 cup fresh Italian parsley
1 tbsp sea salt
1 tsp black pepper
2 tbsp white wine vinegar

Recipe Directions for Roasted Chicken

  1. Mix in a small bowl the onion, lemon juice, half the EVOO, and the rosemary, and about a tsp worth of salt and a bit of pepper.

  2. Stuff it up the chicken's butt.

  3. Use scissors, a knife, or your fingers to separate the skin from the breast meat.

  4. Mix the marjoram, basil, italian parsley, the other half of the EVOO, some more sea salt and pepper in another small bowl.

  5. Stuff this down the pocket you made under the chicken's skin.

  6. Tie the chicken's legs up with some twine.

  7. Put your veggies of choice around it and drizzle over everything with olive oil, lemon juice, and white wine vinegar. Then salt and pepper the whole thing.

  8. Throw it all in the oven on 425 for an hour to an hour and 20 minutes.
