Roasted chicken you can make in a hurry.

Recipe Ingredients for Roasted Chicken

3 lb chicken, roasting
2 tbs butter
1 garlic clove

Recipe Directions for Roasted Chicken

  1. Preheat oven to 400 degrees.

  2. Combine butter and garlic (minced).

  3. Butterfly chicken. Work the flavored butter under the chicken skin. Place chicken on a broiling pan and cook for 20 minutes.

  4. Rotate pane and cook for an additional 20 minutes.

  5. Allow chicken to sit about 10 minutes. Then using a paper towel to protect your hands cut the chicken into 4 servings.

  6. Brining the chicken in salt water or using a kosher bird increases the juciness.

  7. (Make sure to rinse and dry the chicken before stuffing with butter. Remove any butter from skin before cooking as it will burn in the oven.)
