Recipe Ingredients for Roasted Chicken

5 lb. roasting chicken
1/4 cup fresh thyme
3 tbs. lemon juice
10 garlic cloves
2 tbs. unsalted butter
1 large onion
2 cups chopped carrots
2 tbs. Extra Virgin Olive Oil

Recipe Directions for Roasted Chicken

  1. Wash and pat dry. Salt and pepper the inside. Stuff cavity with whole lemon halved and sprigs of thyme and garlic head halved.

  2. Brush outside with butter and salt and pepper it.

  3. Toss veggies with olive oil and season.

  4. 425 degrees for 1and a half hours.
