I like to roast a chicken and then remove the bones and most of the skin to take to work for lunch.

Recipe Ingredients for Roasted Chicken - To pack and Take to Work

3 lb chicken, roasting
2 tbs butter
1 garlic clove

Recipe Directions for Roasted Chicken - To pack and Take to Work

  1. Preheat oven to 400 degrees.

  2. Combine butter and garlic (minced).

  3. Butterfly chicken. Work the flavored butter under the chicken skin. Place chicken on a broiling pan and cook for 20 minutes.

  4. Rotate pane and cook for an additional 20 minutes.

  5. Allow chicken to cool at least 10 minutes. Then using a paper towel to protect your hands cut the chicken up. Remove bones and skin. (I ofent leave the legs intact.)

  6. Divide into portions for the coming week.

  7. Brining the chicken in salt water or using a kosher bird increases the juciness.

  8. (Make sure to rinse and dry the chicken before stuffing with butter. Remove any butter from skin before cooking as it will burn in the oven.)
