Recipe Ingredients for Roasted chicken with goat cheese & sundried tomato stuffing

4 lbs. chicken, whole, roaster, baby, (free range)
4 ounces goat cheese, crumbled
1/4 cup tomatoes, sun dried, chopped
3 scallions, chopped
2 tbsp basil, fresh, chopped
1 tbsp oregano, fresh, chopped
2 tsp thyme, fresh, chopped
4 garlic cloves, minced
1 pepper
1 salt, sea
1 tsp olive oil
1 tsp butter

Recipe Directions for Roasted chicken with goat cheese & sundried tomato stuffing

  1. Preheat oven to 400 degrees.

  2. Rinse and dry chicken removing and discarding innerds. In a bowl combine cheese, tomatoes, garlic, herbs and butter. Pepper to taste. Using your fingers seperate the skin from the meat of the chicken of the breast & legs but make sure the skin stays intact. Stuff the cheese mixture between the skin and the meat spreading evenly.

  3. Coat the chicken wiht olive oil, salt and pepper. Roast at 400 degrees for 10 minutes in middle of oven. Reduce heat to 350 degrees, roatate chicken and roast until 160 - 170 degrees (about and 1.25 hours). Let rest before carving.
