I found this recipe in a magazine and it looked tasty. I added the broccoli to it and removed the bottom crust.

Recipe Ingredients for Roasted Chicken Florentine Pie

1 pillsbury pie crusts
2 cups Chicken, Dark Meat, Meat Only
1/2 medium onion
1 1/4 cup Cheesy Sauce
10 ounces frozen chopped spinach, thawed
2 cups frozen chopped broccoli, thawed
1 pinch nutmeg
1 salt and pepper to taste

Recipe Directions for Roasted Chicken Florentine Pie

  1. Heat oven to 375. Press one pie crust into a 9 in pie pan, trim edges and crimp. Combine chicken in bowl with onion and 1/2 cup Alfredo sauce. Spread evenly over pie crust. Squeeze vegetables to remove all moisture, blend with remaining sauce and a pinch of nutmeg. Season with salt and pepper to taste. Spread evenly over chicken mixture. Place remaining crust over filling and crimp edges together. Cut three, 1 in slits in top crust to vent. Bake in center of oven 25 minutes or until crust is golden brown and filling is piping hot.

  2. My notes: I would saute the onions first so they'd be cooked.
