This recipe calls for fresh herbs, which will be cheaper to get once my herb garden flourishes. In the meantime, dried herbs works just fine! Look for 4 small to medium breast halves with the bone and skin on. The system didn't recognize 1 lemon, so I had to give it a weight - about one large lemon is a quarter pound or so. Also be sure to use reduced sodium stock. Serve with steamed veggies or try the Simple Vegetable Medley I also input.

Recipe Ingredients for Roasted Chicken Breasts w/ Lemon

344 g chicken breasts, bone and skin on, about 4 half breasts
1/4 pound lemon, sliced
1 tablespoon dried sage
1/2 tablespoon dried thyme
1/2 tablespoon dried rosemary
1 tablespoon extra virgin olive oil
1/4 cup lemon juice
8 cloves garlic, sliced
1 1/2 cups chicken stock

Recipe Directions for Roasted Chicken Breasts w/ Lemon

  1. Preheat oven to 450.

  2. Rinse chicken and pat dry with paper towel. Arrange in a baking dish.

  3. Combine sage, thyme and rosemary in a small bowl.

  4. Loosen skin from each breast with your fingers. Slide 2 lemon slices and 1/4 of the herb blend under the skin and smooth the skin to close making sure the skin covers the meat. Season both sides of each breast with salt and pepper and brush a little olive oil over each breast.

  5. Add the garlic and 1 cup of chicken stock to the dish. Place dish in oven.

  6. Roast for 20-30 minutes, basting two or three times with pan juices. Cook until chicken reaches an internal temperature of 160. Remove the pan from the oven and remove the chicken from the roasting pan to a serving platter.

  7. Place the pan on the stove. Pour pan juices with garlic into a saucepan. Mash the garlic with a spoon. Add the remaining stock and bring to a boil. Reduce to a glaze-like consistency.

  8. Spoon glaze over the top of each breast. Serve immediately.
