Roasted Cherry Tomatoes with Cottage Cheese

Recipe Ingredients for Roasted Cherry Tomatoes with Cottage Cheese

2 pints cherry tomatoes
4 cloves garlic, chopped
1 T. Italian seasoning
2 T. extra virgin olive oil
1 Salt and pepper, to taste
2 cup cottage cheese

Recipe Directions for Roasted Cherry Tomatoes with Cottage Cheese

  1. Preheat oven to 400 degrees.

  2. Sort through cherry tomatoes to ensure there are no bad ones.

  3. Rinse and pat dry cherry tomatoes.

  4. In a mixing bowl, mix all ingredients together.

  5. Lay tomatoes on sheet pan as one layer.

  6. Change oven setting to broil and place in oven for about 5 minutes or until the tomatoes begin bursting. Turn tomatoes if desired.

  7. Take the sheet pan out of the oven and let cool for 2-5 minutes.

  8. Serve over cottage cheese.
