Curried roasted cauliflower and sweet potato soup

Recipe Ingredients for Roasted cauliflower and sweet potato soup

1 head cauliflower, florets separated
2 cups sweet potatoes, roughly chopped
3 tbsp olive oil
1 tsp salt
1/2 tsp pepper
1 onion
6 garlic cloves
1 tbsp curry powder
1/2 cup wine
4 cups College Inn low sodium chicken broth
1 cup milk
1/2 cup plain yogurt

Recipe Directions for Roasted cauliflower and sweet potato soup

  1. Preheat oven to 400 degrees. Combine cauliflower and sweet potatoes with 2 tbsps olive oil and salt and pepper. Place in a shallow roasting pan and roast for 1 hr, stirring vegetables after 30 min.

  2. In a large saucepan, saute onion in 1 tbsp olive oil over med-high heat until translucent. Add garlic and curry powder; saute for 1 min. Add wine and cook until wine has almost boiled away. Add chicken broth and veggies, bring to a boil, then turn the heat down to low, cover the pot and simmer for 30 min.

  3. Puree the soup in three batches using a blender. Once blended, add milk and test for seasoning, adding salt and pepper as approprate.
