Creamy Cauliflower soup for l a low carb diet

Recipe Ingredients for Roasted Cauliflower Soup (Low Carb)

6 c. cauliflower, chopped
2 leeks, chopped (white only)
3 cloves garlic, whole
1 stalk celery, medium
4 cups chicken stock (reduced to 3 cups)
1 cup whipping cream

Recipe Directions for Roasted Cauliflower Soup (Low Carb)

  1. Toss all vegetables with olive oil, salt and pepper.

  2. Roast 425 degrees for 25 minutes.

  3. Combine in large sauce pan with chicken stock and simmer 10 minutes.

  4. Using immersion blender beat till smooth.

  5. Add cream and cook only a few minutes till thickened. Let stand 10 minutes. Serve with a swirl of truffle oil or good EVOO.
