Recipe Ingredients for Roasted cauliflower and red pepper soup

2 heads cauliflower
2 oz butter
2 oz olive oil
1 sweet onion
2 stalks celery
1 salt to taste
1 pepper to taste
1 red pepper
1 pint half and half
1 oz minced garlic

Recipe Directions for Roasted cauliflower and red pepper soup

  1. saute onion, garlic, celery in butter until caramelized.

  2. cut cauliflower into small chunks and toss in olive oil with salt and pepper to taste.

  3. toss diced red pepper in olive oil with salt and pepper to taste.

  4. roast vegetables in 375 oven until tender, about 30 minutes.

  5. put caramelized mixture in food processor and add roasted cauliflower and half of the roasted red pepper, puree until smooth.

  6. add half and half to mixture and combine thoroughly.

  7. pour into bowl and top with some roasted red pepper.
