Recipe Ingredients for Roasted Cauliflower with Maple Glazed Pecans

8 c cauliflower, roughly chopped
1 large onion, roughly diced
1 1/2 tsp ground nutmeg
2 tbsp Extra virgin olive oil
1 c raw pecan halves
1 1/4 tbsp Smart Balance spread, melted
1 1/4 tbsp dark amber maple syrup

Recipe Directions for Roasted Cauliflower with Maple Glazed Pecans

  1. Preheat oven to 325.

  2. In a large bowl, combine melted butter spread and maple syrup. Toss pecan halves until well coated.

  3. Spread nuts on a nonstick baking sheet in a single, even layer and bake 10-15 minutes. Pecans should be bubbling and smell awesome. Take care not to burn, as there is a lot of sugar in there.

  4. Allow nuts to cool and harden. Raise oven temp to 425.

  5. Toss cauliflower and onion in olive oil and spread out evenly in a 13x9" casserole. Season with nutmeg, salt, and pepper to taste.

  6. Roast for about 15 minutes. Cauliflower should be nearly done.

  7. Remove from oven and gently mix in 3/4c glazed pecans. Crush remaining 1/4 cup and sprinkle over the top.

  8. Return to oven and bake another 5-10 minutes or until cauliflower is easily pierced with a fork.
