Roasted Cauliflower, onion, and garlic 2 Cheese Soup

Recipe Ingredients for Roasted Cauliflower Cheese Soup

4 cups cauliflower, chopped
1 onion, diced
2 cloves garlic, minced
2 T olive oil
4 cups chicken broth
4 oz velveeta light
4 oz blue cheese
1/2 cup milk
2 T corn Starch

Recipe Directions for Roasted Cauliflower Cheese Soup

  1. Place cauliflower, onion, and garlic in a oven safe dish

  2. drizzle olive oil over the vegetables and toss to coat.

  3. Season with Salt and Pepper to taste.

  4. Roast at 350 for 45 minutes to an hour.

  5. In a sauce pan add the roasted vegetables and chicken broth.

  6. Simmer 23-30 minutes over medium heat.

  7. Puree mixture with a hand blender.

  8. Add velveeta and stir until melted.

  9. Mix milk and cornstarch in a shaker and add to pureed mixture.

  10. Cook another 5-10 minutes.

  11. Add Blue Cheese.

  12. Serve warm.
