Recipe Ingredients for Roasted Cauliflower with Almonds and Figs

2 lb cauliflower or 1 head of cauliflower (about 2 lbs.) cut into 1 1/2? florettes
2 tbs. olive oil
1/4 tsp. ground nutmeg
1/4 tsp. salt, plus more to taste
1/3 cup almonds, whole natural
1/3 cup figs, coarsely chopped dried

Recipe Directions for Roasted Cauliflower with Almonds and Figs

  1. To prepare roasted cauliflower, preheat the oven to 375 degrees F degrees. Place the cauliflower in a large shallow baking dish. Drizzle with the oil, sprinkle with nutmeg and salt and toss to combine. Cover the dish with foil and cook for 15 minutes. Remove the cover and cook, stirring once or twice, until the cauliflower is tender and nicely browned, 20-30 minutes. more.

  2. Meanwhile, toast the almonds in a dry skillet, stirring frequently, until they are lightly browned and fragrant, about 5 minutes. Allow to cool, then chop coarsely.

  3. When the cauliflower is done, stir in the almonds and figs to combine. Season with additional salt to taste.
