2lbs carrots, cut into 3" lengths, thick pieces halved length-wise 12 oz shallots (about 10) peeled & halved lenghtwise 2 TBL olive oil coarse salt & ground pepper ½ cup fresh parsley leaves 2 TBL fresh lemon juice

Recipe Ingredients for Roasted Carrots & Shallots

2 lbs carrots
12 ounces shallots
2 tbl olive oil
1/2 cup parsley
2 tbl fresh lemon juice

Recipe Directions for Roasted Carrots & Shallots

  1. Preheat oven to 450º.

  2. On a large rimmed baking sheet, toss carrots, shallots & oil; season with salt & pepper.

  3. Bake until tender, 30-35 min, tossing once halfway through.

  4. Add parsley & lemon juice; toss to combine.
