Recipe Ingredients for Roasted Carrots and potatoes

2 1/2 pounds potatoes
1/4 cup extra virgin olive oil
2 tbs lemon juice
1/2 tsp oregano
1/2 tsp thyme
1 tbs rosemary
1/4 tsp paprika
1/2 tsp pepper
6 oz baby carrots

Recipe Directions for Roasted Carrots and potatoes

  1. Preheat oven to 425.

  2. Wash, rinse and quarter potatoes.

  3. Combine olive oil, lemon juice, and spices in bowl and mix well.

  4. Add potatoes and carrots and toss.

  5. Arrange in baking pan and bake for about 35 mins, turning potatoes every 15 mins.
