2 teaspoons honey
1/2 teaspoon cumin,
1 tablespoons olive oil
1 pepper
1 1/2 pounds carrots
1 navel orange
3 scallions

Recipe Directions for Roasted carrots and oranges

  1. heat oven to 425 F. in a small bowl, whisk together the honey, cumin, 1 T oil, and 1/4 t pepper.

  2. on a rimmed baking sheet, toss the carrots with honey mixture and spread in even layer.

  3. nestle oranges among the carrots and roast until the carrots are tender and turning golden brown, about 20 to 25 mins.

  4. toss with scallions and serve
