Recipe Ingredients for Roasted Carrots (makes nine half-cup servings)

3 lbs carrots (about one bag)
2 tablespoons olive oil
1 tablespoon garlic
1/4 teaspoon salt
1/4 teaspoon ginger

Recipe Directions for Roasted Carrots (makes nine half-cup servings)

  1. heat oven to 500

  2. clean carrots, peel if you like

  3. cut into large pieces (two bite size)

  4. toss with oil, garlic, ginger & salt

  5. put in oven, 15-20 minutes.

  6. They will be bright orange, charred on the edges and wonderful!
