Recipe Ingredients for Roasted Butternut Squash Soup

1 tsp garlic, minced
1 tsp ginger, minced
1/2 cup celery, small dice
1 cup onion, small dice
1/2 cup leek, white part only, medium dice
1 green apple, medium dice
1 oz butter
4 cups butternut squash, roasted
4 cups chicken stock
1/4 cup white wine
1/2 cup heavy cream

Recipe Directions for Roasted Butternut Squash Soup

  1. Melt the butter and sauté the onions, leeks, garlic and ginger for several minutes, or until they are translucent. Stir frequently.

  2. Add the squash, white wine, and stock. Simmer until the vegetables are tender.

  3. Puree the soup with a hand blender until smooth. Adjust the consistency with stock if needed.

  4. Add the cream and season the soup to its full potential with salt, cayenne pepper, lemon juice, nutmeg, and pepper.
