A tasty soup with a velvety texture. Learnt this recipe at University and anyone who has ever tried it just wants more and more. Very filling and good for you. Butternut squash is an unusual fruit that i'd never tried before I made this. Now I crave it everyday! :P

Recipe Ingredients for Roasted Butternut Squash Soup

1 kg butternut squash
1 onion
1 garlic clove
150 g bacon
900 ml chicken stock
130 ml Natural yoghurt

Recipe Directions for Roasted Butternut Squash Soup

  1. Cut squash into thick pieces, place on lightly oiled roasting tray. Roast for 20-25 minutes in hot (200 / 220oC) oven until flesh is soft & golden brown.

  2. Place rest of oil in a pan & gently heat.

  3. Sweat onions & garlic, without colouring, in the pan for about 5 minutes.

  4. Add diced bacon & lightly brown.

  5. Add roasted squash, pour in stock, bring to boil & simmer for 20 minutes.

  6. Allow to cool slightly.

  7. Blend or liquidise until smooth and velvety in appearance.

  8. Check seasoning, add yoghurt, re-heat gently & serve.

  9. Enjoy! :)
