Great creamy soup for fall! Less fat than the cream based type. Can be made with any winter squash including pumpkin! This recipe is all about your personality, so add or subtract spices to your taste! I love the curry with ginger and allspice, but my husband doesn't...Have fun!

Recipe Ingredients for Roasted Butternut Squash Soup

3 pounds butternut squash, peeled and seeded
2 yellow onions
2 apples, peeled and cored
1 tablespoon olive oil
3 cups vegetable stock
1/2 teaspoon curry powder

Recipe Directions for Roasted Butternut Squash Soup

  1. Preheat the oven to 425 degrees F.

  2. Cut the butternut squash, onions and apples in 1-inch cubes. Place them on a sheet pan and toss with the olive oil, salt and pepper. Divide the squash mixture between 2 sheet pans and spread it in a single layer. Roast for 35 to 45 minutes, until very tender.

  3. Meanwhile, heat the stock to a simmer (can also use chicken).

  4. When the vegetables are done process in blender in small batches with the stock and puree.

  5. When all of the vegetables are processed, place them in a large pot and add more stock if needed to make a thick soup, adding enough to get the volume and consistancy you prefer.

  6. Add curry powder to your taste.

  7. Add salt and pepper to taste.

  8. I love ginger, so I added that and alspice.

  9. This recipe is all about your personality, so fix it with the spices you like! Reheat and serve hot with condiments either on the side or on top of each serving.

  10. Condiment options:

  11. plain yogurt (my fav)

  12. green onion white and green parts, trimmed and sliced diagonally

  13. Flaked sweetened coconut, lightly toasted

  14. Roasted salted cashews, toasted and chopped

  15. Diced banana or pineapple (my fav)

  16. Paprika or cayenne pepper
