Recipe Ingredients for Roasted Butternut Squash Soup

4 cups butternut squash, roughly 1 med sized
1 sweet potato, cubed
1 onion, quartered
2 apples, quartered
4 cloves garlic
32 ounces chicken broth
2/3 cup skim milk
2 tbsp olive oil

Recipe Directions for Roasted Butternut Squash Soup

  1. preheat oven to 400F

  2. chop up garlic, quarter onion and apples, skin yam (sweet potato or reg potato) and chop into small cubes, cut butternut squash down center and scoop out seeds

  3. cover everything in olive oil and salt and pepper everything and lay out on a cookie sheet and bake for 45 minutes to 1 hour flipping every 15 mins except leave cut squash cut side down with skin facing up

  4. when down take skin off squash and with 1/3 chicken stock puree everything in food processor

  5. add remaining chicken stock to soup pot and bring to a boil and add puree. salt and pepper, remove from heat and add milk to desired thickness and enjoy
