A lovely spicy warm soup for winter

Recipe Ingredients for Roasted Butternut squash soup

3 lbs butternut squash
200 g leek
1 medium onion
7 cloves roasted garlic
3 tbsp olive oil
3/4 cup 1% milk
472 ml chicken broth
1 tsp cumin
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp salt

Recipe Directions for Roasted Butternut squash soup

  1. Roast the squash, garlic, onion and leek

  2. Add to food processor and puree with some chicken broth until smooth

  3. Heat the mixture on the stove adding the milk, remaining chicken broth and spices to flavour.

  4. Serve with warm bread
