Butternut squash is versatile and loaded with phytonutrients. Tastes pretty good too!

Recipe Ingredients for Roasted Butternut Squash Soup (Eat Clean Diet p. 52)

4 tbsp Olive Oil
1350 g Butternut Squash
350 g Onion
4 cups chicken stock
2 tbsp lemon juice

Recipe Directions for Roasted Butternut Squash Soup (Eat Clean Diet p. 52)

  1. Preheat oven to 350 F

  2. Prepare a large roasting pan by pouring oil into it, letting it coat the bottom.

  3. Cut the squash in half and remove seeds and string

  4. Place squash in roasting pan, cut side down and prick the skins with a sharp knife.

  5. Place onion around the squash.

  6. Using a sharp knife, cut the top of the garlic bulb off and drizzle with oil.

  7. Place garlic in roasting pan with the other vegetables.

  8. Bake for 45 minutes to an hour or until tender

  9. Remove and let stand.

  10. Scrape baked squash into a large stock pot.

  11. Add the roasted onion and squeeze the garlic flesh in as well.

  12. Add chicken stock and lemon juice and bring to a boil.

  13. Reduce heat and simmer for 15 minutes.

  14. Using a hand blender, puree the soup until it is evenly smooth.

  15. Ladle into soup bowls and garnish with nutmeg, salt and pepper.
