Recipe Ingredients for Roasted butternut squash sauce for pasta

500 g small butternut squash
12 oz v8 vegetable juice
3 tablespoons fresh basil
3 teaspoons lemon juice

Recipe Directions for Roasted butternut squash sauce for pasta

  1. Cut up and roast squash at 400 F for about 45 minutes or until soft and starting to brown.

  2. Puree pulp in blender with v8 (work in batches).

  3. Heat in saucepan with finely chopped basil and stir in lemon juice.

  4. If squash is a bit bitter, might need a teaspoon or so of sugar/honey/maple syrup.

  5. Add cinnamon, if you want to bring out the sweetness.
