Recipe Ingredients for Roasted Butternut Squash with rice

1000 grams Squash, Winter, Butternut
4 1tsp Olive Oil
1 medium raw Onion Red
150 grams Rice, Brown, Medium-grain
60 grams Black Olives
8 medium Mushrooms
15 1/5 grams Parsley
1 clove Garlic
1 serving Lite Mixture Salt

Recipe Directions for Roasted Butternut Squash with rice

  1. Step 1: Preheat the oven

  2. ?1 butternut squash

  3. ?4 tbsp olive oil

  4. ?1 onion, finely chopped

  5. ?150 g rice

  6. ?1 handful of black olives, stoned and chopped

  7. ?150 g feta cheese, chopped

  8. ?4 tbsp parsley, chopped

  9. ?salt and pepper

  10. ?1 large sharp knife

  11. ?1 tablespoon

  12. ?1 pastry brush

  13. ?1 baking tray

  14. ?1 saucepan

  15. ?1 wooden spoon

  16. ?1 bowl

  17. ?1 chopping board

  18. Step 2: Prepare and bake the squash

  19. Cut the squash in half lengthways and scoop out the seeds with a spoon. Place the two halves on a baking tray, brush with olive oil and season with salt and pepper. Put the tray on the middle shelf of the oven and bake for 45 minutes.

  20. Step 2: Prepare the rice

  21. Pour 2 tablespoons of olive oil into a saucepan on a medium heat. Add the onion and sweat for 4 minutes. Add the rice and cook for a further minute, whilst stirring continually. Then add enough boiling water to cover the rice and onion. Bring to the boil and simmer gently for around 15 minutes until the rice is cooked.

  22. Step 3: Make the filling

  23. Transfer the rice into a bowl. Add the black olives, feta cheese and chopped parsley. Season with salt and pepper and mix well.

  24. Step 4: Stuff the squash and serve

  25. Hollow out a little of the squash. Add it to the rice and mix in. Then generously spoon the rice mixture into each squash half. Return the stuffed squash to the oven for 5 minutes to heat it through and soften the feta cheese. Serve immediately.
