An easy recipe, especially if you can buy fresh squash that's already been peeled and cubed.

Recipe Ingredients for Roasted Butternut Squash with Red Onion, Oregano & Mint

2 lb. butternut squash, peeled & cubed
3 T. extra virgin olive oil
2 T. red wine vinegar
1/2 small red onion, very thinly sliced
1/2 T. dried oregano
1/2 garlic clove, very thinly sliced
1/4 tsp. crushed red pepper
1 T. mint leaves, chopped

Recipe Directions for Roasted Butternut Squash with Red Onion, Oregano & Mint

  1. Preheat oven to 450. Toss squash with 1 T. oil, season lightly with salt and pepper, and spread on baking sheet. Bake for 15-20 min., until just tender, stirring occasionally.

  2. Combine remaining ingredients, season with salt and pepper, and pour over the warm squash. Let stand for at least 5 min. before serving
