From Robin Miller. I used Earth Balance instead of butter.

Recipe Ingredients for Roasted Butternut Squash

800 g butternut squash (3 medium, 1-2 large), halved lengthwise and seeded
2 tbsp Earth Balance
2 tbsp brown sugar
1 salt and pepper

Recipe Directions for Roasted Butternut Squash

  1. Preheat oven to 400 degrees.

  2. Place butternut squash halves on a large baking sheet flesh side up.

  3. Place 1 teaspoon butter in the middle of each squash.

  4. Sprinkle brown sugar over each squash.

  5. Season with salt and black pepper.

  6. Roast 25 minutes to 1 hr+, until flesh is fork-tender (cooking time can vary greatly depending on size of squash).
