Recipe Ingredients for Roasted Butternut-Apple Soup

3 lb butternut squash
3 large apples
1 1/2 T olive oil
4 c chicken broth
1 T chopped sage
1/4 t salt

Recipe Directions for Roasted Butternut-Apple Soup

  1. Peel and cut squash in 1 inch cubes.

  2. Core apples and cut in 8 pieces.

  3. Toss squash and apples in a large bowl with olive oil and salt. Roast at 450 for 45 minutes or until done.

  4. Place squash and apples with chicken broth and sage in blender in batches. Puree until smooth and heat 5-6 minutes in heavy pot.

  5. Serve topped with walnuts. May drizzle with walnut oil.
