A modification of my mom's recipe. The tarragon and cinnamon add a nice sweetness to the roasted sprouts. Use butter flavored cooking spray (like Pam) for additional flavor and greasing (in addition to the olive oil)

Recipe Ingredients for Roasted Brussels Sprouts

1 pound brussels sprouts
1 tablespoon extra virgin olive oil
1 salt and pepper to taste
1/4 teaspoon celery seed
4 cloves minced garlic
1/2 teaspoon ground cinnamon
2 tsp dried tarragon

Recipe Directions for Roasted Brussels Sprouts

  1. Make sure brussels sprouts are rinsed.

  2. Pre-heat an oven to 400F

  3. Heat olive oil in medium skillet over medium high heat. Add garlic and celery seed and sautee until softened.

  4. Add brussels sprouts to pan and sautee until lightly browned (about 10-15 minutes). While sprouts are sauteeing grind cinnamon over them.

  5. Grease a baking dish with butter spray. Add browned sprouts to dish and sprinkle with tarragon. Roast for 15-20 minutes or until sprouts are nice and roasted and soft.
