Recipe Ingredients for Roasted Brussel Sprouts & Tomatoes

1 pint grape tomatoes
1 pint brussel sprouts
1 leek
1 jalapeño pepper
4 cloves garlic,
2 tablespoons dark raisins
1/4 cup extra virgin olive oil
4 tablespoons balsamic vinegar
1 teaspoon dried basil\

Recipe Directions for Roasted Brussel Sprouts & Tomatoes

  1. Wash and cut grape tomatoes and brussel sprouts

  2. Slice leek thinly

  3. Dice garlic and jalapeno

  4. Mix all ingredients in baking pan. Bake on 400º for about 20 minutes at top of oven

  5. Serve on warmed soft corn tortillas or over brown rice pasta for a vegan, gluten-free dinner.
