Recipe Ingredients for Roasted Brocolli con Pomodoro

6 cups broccoli florets
3 tbsp extra virgin olive oil
2 tsp garlic, chopped
1/2 tsp sea salt
3 tbsp parmigiano reggiano, grated
2 tomato, chopped
1 tsp oregano, dried
1/2 tsp crushed red pepper
2 tsp extra virgin olive oil
1/2 tsp sea salt
1/2 tsp fresh ground black pepper

Recipe Directions for Roasted Brocolli con Pomodoro

  1. Preheat oven to 425 degrees.

  2. Massage the olive oil and garlic into the broccoli. Spread the broccoli out on a baking sheet with plenty of room between the florets. Sprinkle with salt.

  3. Roast for 20 minutes, shaking and turning the pan half way through.

  4. While the broccoli roasts, heat the olive oil for the tomato. Add the tomato, salt and oregano.

  5. Cook over medium heat until reduced, about 15 minutes.

  6. Remove broccoli from pan.

  7. Sprinkle with freshly ground pepper. Top with tomato sauce and cheese.
