Farro Salad - Add cooked shrimp or chicken and make it a complete meal.

Recipe Ingredients for Roasted Broccoli and Farro Salad

0.75 cup Farro
16 oz Broccoli
0.5 cup, crumbled Feta Cheese
3.527 oz Scallion
2 tbsp Parsley
10 ea. Raw Tomato Cherry
0..75 oz Extra Virgin Olive Oil
1 tsp Pepper, Red Or Cayenne
1 tsp Kosher Salt

Recipe Directions for Roasted Broccoli and Farro Salad

Bring pot of salted water to boil add farro - cook 20-25 minutes until done. Drain and plac in bowl. meanwhile, Preheat oven to 400 degree F toss broccoli florts in olive oil place on baking sheet into oven and cook until done about 20 minutes. Add to bowl with farro. Combine rest of ingredients (chopped up) and toss with olive oil. Serve at room temp.
