Excellent diet food! Delicious as antipasto, goes well with rosemary chicken and beautiful as a garnish if diced after roasting. The herbs basil, thyme, and rosemary are also excellent in accompaniment. One of mom's favourites.

Recipe Ingredients for Roasted Bell Peppers and Garlic

1 med. red bell pepper, sliced
1 Yellow bell pepper, sliced
1 Orange bell pepper, sliced
1 Garlic clove, chopped
2 tbs. olive oil
1 dash of salt
1 dash of parmesan

Recipe Directions for Roasted Bell Peppers and Garlic

  1. Note: Try to use smaller orange and yellow peppers, because the red is sweeter and better-looking if it can dominate the dish.

  2. Preheat oven to 400 degrees F, lay peppers in tight lines on cookie sheet. Roast ten minutes on second-to top shelf under broiler. Remove from oven, turn, replace. Roast ten more minutes, then remove.

  3. Put olive oil in skillet. Should cover entire surface of pan. Turn heat on med-high.

  4. Chop garlic, drop in skillet. Allow to fry about a minute, then add peppers. Crank a salt grinder about twice over the whole thing, or sprinkle about a 1/4 tsp. of table salt over. Fry for five minutes, flipping and/or stirring. Should become very fragrant. If not, keep frying until the edges of the peppers blacken the tiniest bit, or the garlic becomes intensely brown.

  5. Serve immediately. Parmesan cheese goes well with this.
