Recipe Ingredients for Roasted Beets 'n' Sweets

3 beets (2" dia, sphere)
2 1/2 1tsp Olive Oil
1 tsp Garlic Powder
1 tsp Salt, Table
1 tsp Pepper, Black
2 medium raw Sweet Potato
1 medium (2-1/2" dia) Onions
1 tsp Sugars, Granulated

Recipe Directions for Roasted Beets 'n' Sweets

  1. Preheat oven to 400 degress F.

  2. In a bowl toss the beets with 1/2 tablespoon olive oil to coat. Spread in a single layer on a baking sheet.

  3. Mix the remaining 2 tablespoons olive oil, garlic powder, salt, pepper, and sugar in a large resealable plastic bag. Place sweet potatoes and onion in the bag. Seal bag and shake to coat.

  4. Bake beets 15 minutes in the preheated oven. Mix sweet potato mixture with the beets on the baking sheet and continue baking for 45 more minutes, stirring after 20 minutes.
