Recipe Ingredients for Roasted Beets with Feta Cheese

16 oz beets
1/4 cup shallot
2 tablespoons parsley
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 tablespoon red wine vinegar
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup feta cheese

Recipe Directions for Roasted Beets with Feta Cheese

  1. Wrap the beets in foil and bake at 400 F for about an hour or until tender. Remove from heat.

  2. In the meantime, combine the shallots, finely chopped, with the oil, vinegars, salt and pepper.

  3. When beets are cool enough to handle, peel and chop the beets into bite-sized chunks.

  4. Toss in the vinegarette, toss with feta and serve warm.
