Roasted Beets, Chickpea and Zucchini Salad

Recipe Ingredients for Roasted Beets, Chickpea and Zucchini Salad

15 oz Garbanzo Beans Chickpeas Drained and Rinsed
6 beets (2" dia, sphere) Beets
90 grams Spinach
1 large Squash, Summer, Zucchini, Includes Skin
1.5 tbsp Olive Oil

Recipe Directions for Roasted Beets, Chickpea and Zucchini Salad

  1. Directions

  2. Brush beets with olive oil and roast at 400 degrees for 35 minutes or until cooked through.

  3. Peel skin from beets when cool. Chop.

  4. Roast zucchini to desired doneness. Chop.

  5. Drain and rinse chickpeas.

  6. Mix all with spinach. Add olive oile, Salt, pepper, onion, additional herbs to taste.
