Beets are about the best vegetable in the world, loaded with iron and vitamins. This is a simple but flavorful salad from "Bouchon" by Thomas Keller.

Recipe Ingredients for Roasted Beet Salad

1 1/2 lbs (2-3 large) red beets
3 tbsp extra virgin olive oil
1/4 tsp kosher salt
1 Freshly ground black pepper
1 tbsp red wine vinegar
2 tbsp orange juice (fresh, if possible)
1/8 cup red onion, peeled
1 tbsp fresh tarragon, chopped
1 tbsp chives, minced

Recipe Directions for Roasted Beet Salad

  1. Preheat oven to 375 degrees (F)

  2. Wash the beets and trim the stems, leaving about 1/4" attached. Toss in a bowl with 2 tbsp olive oil, 2 tbsp water, 1/2 tsp salt, and 1/8 tsp pepper.

  3. Place the beets on a large piece of aluminum foil. Lift up the edges of the foil and squeeze together to form a packet. Place the packet on a small baking pan and roast for about 1 1/2 hours. Carefully unwrap the beets and let stand until just cool enough to handle.

  4. Rub each beet with a paper towel to remove the skin. Cut off the tops with the stem and discard. Cut the beets into quarters, then slice crosswise into 1/4 inch slices and place in a bowl. Season with a light sprinkling of salt and pepper. Add red wine vinegar. orange juice, and 1 tbsp of olive oil. Toss and season to taste with salt and pepper.

  5. Let the beets marinate for at least 30 minutes, or up to a day, in the refrigerator. Bring to room temp before finishing the salad.

  6. About 30 minutes before serving, cut 3 or 4 very thin slices from the onion (mandolin will be a help). Toss the beets with the onion, tarragon, and chives.

  7. Just before serving, check the seasonings and add additional salt, pepper, and/or vinegar to taste.
