Recipe Ingredients for Roasted Beet & Garlic Soup

3 beet (2" dia) Beets
2 carrot (7-1/2") Carrots
1 medium raw Leeks
8 clove Garlic
0.5 medium (2-1/2" dia) Onions

Recipe Directions for Roasted Beet & Garlic Soup

  1. Preheat oven to 400*F.

  2. Wash beets and remove tops.

  3. Roast beets in oven for 1 hour, adding garlic cloves (unpeeled) for only the last 20 minutes.

  4. Chop carrots, leeks, and onion.

  5. Simmer in a medium pot with 3 c. water.

  6. When beets and garlic are done roasting, add to pot.

  7. Bring to a boil, then cover and simmer for about 25 minutes until all items are tender.

  8. Blend on high until a smooth consistency.

  9. Season with salt and pepper to taste (optional).
