Roasted beets with feta, cumin and dill

Recipe Ingredients for Roasted Beet and Feta Salad

6 beets+2"+dia,+sphere beets
1 tablespoon olive oil
1 teaspoon kosher salt
2 tablespoons feta cheese crumbles
1/8 teaspoon dill weed
1/2 teaspoon cumin

Recipe Directions for Roasted Beet and Feta Salad

  1. Peel beets and cube into 3/4 " squares. Place into bowl and add oil and salt. Toss well and place on parchment-lined cookie sheet. Bake at 450 (use convection if you have it) and roast until they start to brown on the edges.

  2. Remove from oven and let cool.

  3. Add feta, dill and cumin. Stir well and serve.
