Roasted Beet and Citrus Salad Recipe

A yummy and unusual side dish, a change from the typical green salad. Serve with creamy poppy seed dressing.

Recipe Ingredients for Roasted Beet And Citrus Salad

1 pound beets, roasted
8 oz red onions, roasted
1 tablespoon olive oil
1 lb baby spinach
8 oz canned mandarin oranges, drained
3 oz goat cheese, crumbled
6 tbsp almonds, sliced, toasted

Recipe Directions for Roasted Beet And Citrus Salad

  1. For the roasted vegetables, you will need an additional 2 tbsp olive oil, some salt, preferably Kosher salt, and some ground black pepper.

  2. Roasted Beets:

  3. Wash whole beets well.

  4. Coat beets with 1 tbsp olive oil

  5. Place on cookie sheet sprayed with oil

  6. Roast at 425 degrees F until fork tender, about 20 - 25 minutes.

  7. Cool.

  8. Remove skin with hands or paring knife.

  9. Cut into 1/2 inch dice.

  10. Roasted Onions:

  11. Peel and slice onions 1/4 inch thick

  12. Toss onions with 1 tbsp olive oil

  13. Season with salt and pepper and blend well

  14. Place onions in a single layer on sheet pans, roast at 400 degrees F for 10 - 15 minutes or until soft and golden brown on edges.

  15. Remove onions from sheet pans and cool.

  16. If desired, may roast the beets and onions at same time, keeping oven temperature 400 degrees F. The beets may take a few minutes longer this way.

  17. To plate:

  18. Arrange 1/6 of the spinach on each plate.

  19. Top with 1/6 each of the roasted beets, mandarin orange segments, roasted onions, goat cheese and almonds.

  20. Serve with the dressing on the side.
