From Simply Recipes Web site.This has to be one of the easiest ways to prepare roasted carrots. Use small "baby"carrots (4-5 inches long) not the small pill-capsule-shaped carrots in a bag.

Recipe Ingredients for Roasted Baby Carrots

1 1/2 lbs baby carrots,
1 medium red onion, peeled, cut lengthwise (root to top) into 8-12 wedges
2 tbsp olive oil
1 tbsp fresh chopped rosemary,
1 pinch Garlic powder
1 Salt
1 Freshly ground black pepper

Recipe Directions for Roasted Baby Carrots

  1. Preheat oven to 400F. Gently toss together the carrots, red onion, rosemary (substitut 1 tsp dry) to coat with the olive oil. Lay out on a rimmed baking pan, lined with aluminum foil. Sprinkle with garlic powder, salt, and pepper.

  2. Roast for 30 to 40 minutes on middle rack or bottom rack, until well browned.
