Roasted aubergine with spring onion and soy sauce

Recipe Ingredients for Roasted aubergine

200 g eggplant, roasted and peeled
1 tbsp soy sauce
1 tsp sesame oil
1 spring onion
30 g peanuts, dry roasted

Recipe Directions for Roasted aubergine

  1. Steam then dry-roast a peeled eggplant.

  2. Place in a small oven dish. Chop the spring onion and let it cook slowly in some sesame oil. When soft, add 1 Tbsp soy sauce and pour over the eggplant. Microwave till heated through. Serve with one once of chopped dry-roasted peanuts sprinkled over it.
