Roasted aubergine and pepper soup

Recipe Ingredients for Roasted aubergine and pepper soup

3 large sweet peppers
1 eggplant, unpeeled
2 tbsp olive oil
1 tbsp garlic paste
2 cups diced tomotoes
1 tbsp dried mint
1/2 liter water
1 stock cube

Recipe Directions for Roasted aubergine and pepper soup

  1. Roast aubergine and peppers in oven.

  2. Cook roasted aubergine, peppers, garlic paste, and dried mint mix for a few minutes, then add the can of diced tomatoes. Cook for a few more minutes.

  3. Add water and one vegetable stock cube. Cook for a further 5-10 minutes.

  4. Puree and serve with dollop of yoghurt and tortilla chips.
