Modified from Emeril recipe I found

Recipe Ingredients for Roasted Asparagus with Sauteed mushrooms

1 pounds asparagus
5 tablespoons extra-virgin olive oil
1 1/2 tablespoons minced garlic
1 pinch Salt
1 pinch ground black pepper
2 teaspoons fresh lemon juice
6 white mushrooms
1 pinch crushed red pepper
1 pinch oregano

Recipe Directions for Roasted Asparagus with Sauteed mushrooms

  1. Preheat the oven to 425 degrees F.

  2. In a large glass baking dish, toss the asparagus with the olive oil and garlic. Season lightly with salt and pepper, and toss. Bake until the asparagus are tender and lightly browned, 15 to 20 minutes, depending upon the thickness of the stalks, stirring twice

  3. Sautee mushrooms with 2 tablespoons olive oil and garlic in pan until tender

  4. Remove from the oven and toss with the lemon juice. Adjust the seasoning, to taste.

  5. Add sauteed mushrooms
