Recipe Ingredients for Roasted Asparagus and Red Peppers

1 lb. asparagus, cleaned, bottoms trimmed
1 large red bell pepper, seeded and cut into 1/2-in. strips
1 tbsp fresh lemon juice
1 tsp olive oil
1/2 tsp salt
1/4 tsp crushed red pepper
1 tsp grated lemon zest

Recipe Directions for Roasted Asparagus and Red Peppers

  1. Preheat oven to 400F

  2. Spray a non-stick baking sheet with non-stick spray.

  3. In a large bowl, combine asparagus and red bell pepper strips. spray with cooking spray. Add lemon juice, oil, salt and crushed red pepper; toss well to coat

  4. Arrange vegetables on the baking sheet.

  5. Bake until tender, shaking the pan occasional, 15 to 18 minutes.

  6. Transfer the vegetables to a bowl, toss with lemon zest and serve.
