Recipe Ingredients for Roasted Asparagus & Red Onion Quesadillas

6 low carb tortillas, 8 inch
16 oz asparagus, chopped
2/3 c red onion, chopped
2 tsp salt
1 tsp pepper
2 tbsp extra virgin olive oil
6 oz pepper jack cheese, sliced

Recipe Directions for Roasted Asparagus & Red Onion Quesadillas

  1. Wash and chop asparagus into approximately 1/4 - 1/2 inch chunks. Slice red onion. Place in 9x13 baking dish. Drizzle with olive oil. Add salt and pepper. Roast in 375 degree oven until soft.

  2. Spread tortillas on foil lined cookie sheet. Fill half of each tortilla with the asparagus onion mixture. Add cheese and fold tortilla over. Bake in 375 degree oven until golden brown and cheese is melted.
